Rojo Brillante Persimmon
The persimmon kaki, which comes from the Ribera del Júcar in Valencia, gets its name from the incredible colour it takes on when it reaches its ripeness. The fruits are large, making every bite a real treat.
In the old days, to enjoy its flavour you had to wait patiently for it to lose its astringency and become edible. But thanks to an innovative organic treatment, you can now enjoy it even while it's firm, with a texture similar to an apple.
This treatment is what we call "persimonisation" here at home, and it's what sets this kaki apart from its softer version. Still, at heart they're both the same fruit. They're best enjoyed halfway ripe, when their texture is similar to a mango's.
