🥬 I don't know if you've had the chance to taste the romaine lettuce that Javi and Alberto grow in the traditional way...
Speaking of romaine lettuce, do you know why it's called that? Hmm, it turns out it hides several secrets 🤫. But I'll tell you at the end of the email.
Back to what I want to tell you today. If there's one thing I enjoy about this job, it's going back and forth to the fields of my fellow farmers 🚜.
Last week we talked to Salvador about avocados and irrigation. This week it was time to chat with Javi and Alberto.
We stopped by their fields to pick romaine lettuce and not only did we bring back an excellent product, but also a bit of shared wisdom during harvest.
One thing we have in common with my fellow farmers is that we've been doing this for years...
You see, harvesting lettuce with this skill takes years and years of practice, just look:

Have you seen that size?
Then they say you need chemicals and who knows what else to achieve a quality product. Don't pay attention to that; real food doesn't need strange additives.
What's more, healthy foods are alive 🌱.
In the particular case of these romaine lettuces, Javi showed us the sap they have once they are cut:

This sap, which is like the blood of vegetables, is what allows plants to nourish themselves as they grow, as it circulates everywhere.
And its appearance once harvested means the plant is alive 💯.
Imagine that once we harvest it, at most, it arrives at your home the next day. That's why we say that when you consume our products, you are eating fruits and vegetables that still retain life within them.
And here we always say that what's important is on the inside 🥰.
Furthermore, the flavor, the aroma, that is, the organoleptic qualities, are something else entirely...
Nothing like these poor lettuces stored in bags, who knows how long ago 💔.

As you can see them, these lettuces have lost their vitality because their sap is completely dry. And who knows what garbage they contain to last so many days on the shelves.
