I'm really excited to write today's newsletter, because I'm going to tell you about Clara's family, who have just joined the Campos del Abuelo family π.

And for good reason, when I first visited their field, I was amazed.
To focus their resources on what really matters, Clara and her family do not pay the high fees required to be certified as an organic product.
These fees are a world unto themselves, remind me to tell you about them in a future newsletter π!
Instead, Clara uses those resources to produce in the most sustainable and eco-friendly way possible π₯°.
And they take this mentality to the extreme, they don't use any chemicals. For example, instead of buying artificial fertilizers, they make their own compost.
And this is quite common, but they go a step further; to protect themselves from the pests that plague the fields, they don't use any type of pesticide β.
Instead, they use a very clever method that promotes biodiversity and enriches the soil: they plant aromatic herbs.
And it not only helps them keep pests at bay, but it's a pleasure to be in their fields π.

As you can see, it is an exceptional product, the best of the best; and yet, it cannot be advertised as organic because it does not pay the European Union fees.
That's why, on our website, we have now created special labels to help you know what you are buying:

As you can see, there are two labels, "Organic" and "Artisanal" π.
The first is quite simple, it means that it is certified as organic according to the European Union system π.
The second, we reserve for products that do not have this certificate, but would have it if they applied and were paying for three years to obtain it.
In other words, they follow the guidelines to be considered 'organic', but they are not registered.
Finally, those without a label are not left behind either, as all our products are zero waste β»οΈ.
As you already know, all our products are of local denomination, and we do not treat them with any post-harvest chemicals β. As soon as we pick them from the field, we send them to you the same day.
Well, all this is very good, but how does it affect you?
Well, for starters, you can already get three of the vegetables that Clara and her family grow:

Carrots, leeks, and summer crisp lettuces are already available for purchase today.
Leeks and lettuce are a very limited harvest, so they may run out by next week, but in return, as the seasons pass, we will bring more products...

Now, to conclude this newsletter, I want to clarify that one of the problems with our system is that by prioritizing the quality of the vegetables, [the process is slower] the harvest is not as abundant.
You may have noticed this with the blueberries, sometimes they appear as "Not available" (if you look at the last photo, the oak leaf lettuce was out of stock when I took the picture).
This does not mean that it has run out until next year, but rather that we do not have stock to make your box today, but if you come back the next day, we may have it again, so it is important to keep an eye out π.
