For years we've been told that raw spinach is the bee's knees. The greener, the healthier, the more "fit." But be careful, because spinach has character and doesn't always show its best side when cold. In fact, sometimes it acts like that friend who doesn't say anything interesting until they warm up a bit.

The culprit is called oxalic acid, a natural substance that spinach brings as standard and that, when raw, messes up the party by blocking the absorption of important minerals like calcium and iron. So, you eat your salad thinking you're getting strong, and the spinach, internally, says: "Don't worry, I'll make sure this doesn't happen."

Since everything here is natural, we go with nature's rhythm; the season dictates which fruit or vegetable is available, so when one finishes, you have to wait until the next year. Among those is the bacon avocado, which is almost out of season, so if you haven't tried it, I recommend you do it now.

So now you know: with spinach, less pretense and more common sense. A touch of cooking and everything fits better, like Sundays at grandpa's house.
