There's something that sometimes comes as a surprise when our artichokes arrive home: some have a small hole in the center. And no, it's not a flaw... at Campos del Abuelo, we know that, in reality, it's almost a badge of honor.

That tiny hole usually appears in first-year artichokes. Young plants produce especially tender artichokes, with softer leaves and a more delicate flavor. In other words, they're the kind that win over those who used to say, "I wasn't a fan of artichokes... until now."

Moreover, being young plants, they concentrate a lot of freshness and texture. That's why when you cook them —grilled, baked, or simply sautéed— they turn out especially juicy. They're the kind that almost melt in your mouth.

And here's the curious part: many farmers recognize the best pieces precisely by that small detail in the center. What some see as a defect... for those who know the countryside, it's a sign of quality.
