They say that everything comes back around and that old customs are now sold as if they were the latest innovation. And it's partly true.

Here in Valencia, my grandparents used to keep fruit in the cool part of the house, in those pantries with thick walls where summer couldn't get in, not even with an invitation.

Well, today I feel a bit like them, only with trucks and sensors, because we've been working for months to ensure your orders travel with real refrigeration and the flavor remains intact from the tree to your table.

It hasn't been easy, let me tell you...

You already know us. Every morning we check what you've ordered and we go to harvest. We do it this way because fruit, when it's ripe, doesn't wait for anyone.

And since we don't use strange substances to preserve our products, the trick to getting it to you just as we eat it in the field is very simple to explain and very difficult to execute: maintaining a good temperature all the way.

We've tried a thousand times in other ways, changing boxes, routes, loading times, packaging... and there was always a link that would warm up. But this time, let me tell you (and knock on wood) that I think we've hit the nail on the head.

Why is cold so important, especially for delicate fruits? Imagine that each fruit breathes. The hotter it is, the faster it breathes, and the sooner it uses up its energy, aroma, and texture.

With a cool temperature, that breathing calms down and the flavor remains more rounded. It's very noticeable in strawberries, blueberries, or cherries.

Strawberries arrive firm and sweet, not watery. Blueberries retain that whitish layer you see on the outside, which is their natural wax, and with cold it stays better, so the bite is crunchy and more aromatic. And cherries, if they travel cool, arrive taut, with green stems and that snap that brightens my day.

To achieve this, we've really fought for it. There have been calls, tests, back and forth with transporters and, above all, many trial boxes.

But in the end, we managed to make the shipment cost €5.50 for our customers. You won't find this anywhere else, I tell you with a mix of pride and relief, because in Spain it's almost no longer done this way when the product comes directly from the field.

And it arrives at your door as if you had just stepped into the garden with me.

Someone asked me if all this fuss about cold wasn't overdoing it. Let me tell you what I've learned from dirt on my boots. Well-managed cold doesn't mask anything; it just helps the fruit retain what it already has. It doesn't invent flavors; it preserves them.

And here comes the good part. We are blending the good things our grandparents taught us with what today's technology offers us. They knew that coolness was gold. We add a stable cold chain and routes measured to the minute so that quality isn't broken along the way.

Old wisdom with new tools. And yes, it sounds modern, but deep down it's about doing things as always, with good sense.

I confess that, as a farmer, I'm thrilled to be able to say this. Because I work with other farmers throughout Spain who care for their crops as their ancestors did, by hand, with patience and respect for the seasons.

And now that we can guarantee that this care arrives intact at your home, at a fair price, it takes years off me.

I know it sounds strong to say this is unique, but it truly is.

We harvest in the morning according to your order, we select piece by piece, and now, with cold, the fruit travels with its blanket of freshness to your door.
