Traditional Soft Persimmon

The persimmon, native to the Ribera del Júcar region of Valencia, gets its name from the incredible color it acquires when it reaches maturity. Its fruits are large, making each bite a true delight.

In the past, to enjoy its flavor, one had to patiently wait for it to lose its astringency and become edible. And that's how we want you to enjoy this tree-ripened persimmon, undoubtedly our favorite.

This treatment process is what we call "persimmonization" in-house, and it's what differentiates this persimmon variety from its softer version. However, both are essentially the same fruit. It is best to enjoy them at an intermediate point of ripeness, when their texture is similar to that of a mango.
