In the past, one had to patiently wait for it to lose its astringency and become edible. However, thanks to innovative ecological treatment, you can now savor it even when it's firm, akin to the texture of an apple.

This treatment process, what we call 'persimonization' at home, sets this persimmon variety apart from its softer counterpart. Yet, both are essentially the same fruit. It's best enjoyed at an intermediate stage of ripeness when its texture is akin to that of a mango.

Antiguamente, para poder disfrutar de su sabor, había que esperar pacientemente a que perdiera su astringencia y se volviera comestible. Y así es como queremos que disfrutes este caqui madurado en árbol, sin duda nuestro favorito. 

Este proceso de tratamiento es conocido como en casa denominamos "persimonización", y es lo que diferencia a esta variedad de caqui de su versión más blanda. Sin embargo, ambos son la misma fruta en esencia. Lo más recomendable es degustarlos en un punto intermedio de madurez, cuando su textura es similar a la de un mango.
