If you follow us on Instagram, you already know that I recently visited one of my colleagues, who grows tender garlic and has an ancient technique that I'd like to share with you.

There are still farmers who work the furrows the old way: with animals and without heavy machinery, as in this case. Why? Because it prevents the soil from compacting, allows it to breathe better, and maintains its natural structure. In other words, the soil doesn't "suffocate" as it sometimes does with so many machines.

When furrows are made with animals, the work is slower, yes... but also more precise. The rhythms of the field are respected, each crop line is cared for, and water distribution is improved. The result: healthier plants and more balanced crops.

Furthermore, this type of work helps maintain soil life: microorganisms, nutrients, and that invisible richness that later translates into flavor. Because yes, even if you can't see it, all of that ultimately makes a difference in what you eat.

So, the next time you taste our vegetables, remember: behind them, there's not just soil... there's tradition, patience, and, in some cases, even a horse lending a hand. And that, nowadays, is almost a luxury. 🌿✨
