Good morning!

Another week begins, and we're still working hard in the fields. You can really feel spring in the air, can't you? It's always a pleasure to walk through the fields here when new shoots are emerging.

And not just new shoots, but also new products direct from the mountains ⛰️.

It's a true joy for me to announce that our red and crunchy delights are back, straight from Alexander and Sujan's fields in the mountains. Just look at them:

We recently received the first cherry harvest. And looking at them (and also tasting them 😅) made me think about the process behind these cherries having the quality they do. So I immediately said: "this needs to be told."

So, here I am. Today, I bring you a sweet, red, and 100% artisan story... the story of Alexander and Sujan's cherries.

They grow their cherry trees in a privileged area in the interior of Alicante, high in the mountains. There, between 600 and 900 meters above sea level, lies a very special microclimate. During winter, temperatures are cold enough for the tree to go dormant (essential for proper flowering later), and in summer, the days are sunny but the nights remain cool.

This day-night temperature difference causes the fruit to ripen slowly and accumulate more sugars, resulting in truly sweet, crunchy, and flavorful cherries 🍒.

I don't know if the same thing happened to you, but my mouth is watering! But let's go! I'll continue telling you about these little delights (and then I can go taste them again 🤣).

In addition to the temperature differences, there's the type of soil they grow in: a chalky and well-drained terrain that prevents waterlogging and allows the roots to breathe well. All of this creates the perfect conditions for the cherries to grow at their natural pace, without rush.

Now, the "how" also matters, and a lot.

These cherries are grown artisanally. From pruning to irrigation and tree protection, everything is done without invasive methods. That's why you'll sometimes hear me say (or write) that we accompany nature's process without invading it. Respect for what the earth gives us is fundamental for growing and sending quality products. There are no shortcuts here.

The harvest time is also an art. Each cherry is hand-picked, one by one, early in the morning when the sun isn't too hot yet and the fruit is at its peak. And only those that are completely ripe are harvested. This ensures that they arrive at your home perfectly.

What Alexander and Sujan do in Alicante is exactly what we try to uphold here, from the countryside: a way of farming that respects cycles, cares for the environment, and produces fruits that taste authentic.

And I won't lie to you... when you see a box full of shiny cherries, with that intense red, knowing they come from a tree nurtured with time and care, you can't help but feel something special. You're eating nature in its purest form.
